This recipe is from my husbands, family’s cookbook. One of our favorites.
It’s really more like a casserole.
Ingredients:
1 cup cornmeal
1 can cream style corn
2 eggs
3/4 cup milk
1/2 tsp soda
3/4 tsp salt
2 jalapeño peppers
1/2 cup cooking oil
1 onion
1/2 lb grated cheese
1 lb ground beef
Mix cornmeal, eggs, milk, soda, corn & oil. Set aside. Sauté meat & drain. Prepare onions, peppers & cheese in separate mounds. Grease large skillet. Heat, then sprinkle a very thin layer of cornmeal in skillet & let brown. Pour half of the batter into hot skillet, sprinkle cheese evenly over batter. Add meat, onions & peppers. Pour remaining batter on top. Bake on 350 for 45-50 minutes.
Ingredients: I forgot to put the eggs in the picture, but I didn’t forget to put them in the bowl.😆
The first time I cooked it, about 25 years ago, I didn’t pay attention to the part that said pour half of the batter then, layering it, and I and mixed it all together. My family liked it that way, so that’s how we have always made it. It’s also more simple than layering. I’m all about being more simple!
Mixed all together.
We use a large cast iron skillet.
I don’t make many things from scratch because I’m more of a semi-homemade, person. I like simple things.😍 Give me a cake mix & I’ll make it at home, semi-homemade. Cinnamon rolls from a can, semi-homemade. Ragu spaghetti sauce, semi-homemade. You get my drift. 😉 This is one of the few things I make from scratch, besides that good ole country white gravy. I can’t push it, you know. I don’t want to spoil my family even though, I can make more things from scratch. 😋 I normally do a lot of cooking during the holidays or special occasions that’s all homemade. I started that as my kids got married and I started hosting holiday gatherings.
Bake on 350 for 50 minutes.
My husband cut up the onion & peppers, he likes them crunchy. You can do yours more fine, if you like.

This looks so good and easy enough for me to make! Id do this with ground turkey. Maybe this weekend! Ill take a pic if it comes out pretty lol
Im a semi from scratch person 90% of the time. But cornbread is something I prefer from scratch for sure.
